Dear Diary:

Well, I broke the news to the waffle maker last night. The kid has put dibs on him. Sometime next week his 20-year career as a country waffle maker ends and he'll be moving on to Montreal and a new life as the Bright Lights Big City Waffle Maker.

One last hit of waffle goodness before he moves on to the bright lights big city. I'm sure you all join me in wishing him the greatest success at his new endeavours.

We had one last hit of waffle goodness and what would Diaryland be without sharing? So, without further ado, here's a recipe so you, too, can know waffle bliss.

Wonderful Whole Wheat Waffle Goodness (don't worry, it doesn't TASTE healthy.)

Ingredients:

3 eggs, separated

2 tbsp. sugar

1/4 cup of oil

1 cup milk

1 1/2 cups whole wheat flour (don't even think about using white flour, it turns into a yucky mess if you do)

1/2 tsp. salt

2 tsp. baking powder

Beat the egg yolks, sugar and oil. Add half the milk and stir. Add the dry ingredients and remainder of the milk. Mix until blended, but don't overbeat. Beat the egg whites until they are stiff and fold into the batter. Dump it into your heated waffle maker.

This time of year it is the law that you have to top your waffle goodness with fresh strawberries. The rest of the year the authorities are more flexible.

Mmmmmmm waffle goodness.

You may now go back to whatever you were doing.
